Chef Nobu Matsuhisa’s Bento Box consists of a small molten chocolate cake crowned with bits of shiso (a Japanese mint used for sushi) and a creamy scoop of potent green tea ice cream.  The careful choreography of flavors, textures and colors replaces the importance of the presentation of the traditional Japanese Bento Box.  My Bento Box is prepared with instruments of similar timbres and registers, in which constant polyphonic development is employed.  Each instrument is featured while directing the contrapuntal motion, but often loses its sense of identity to one homophonic line.
